Stir-fried Beef Fillet in Oyster Sauce

Beef
Broccoli
Carrot
Ginger
Spring onion

Method

1Slice thinly across the grain, season
2Trim broccoli into smaller florets.
3Cut ginger into diamond shape. Cut spring onion into sections
4Heat oil in wok, stir-fry broccoli until well-tossed with oil until the vegetable is tender. Dish.
5Heat oil in wok, sauté beef until 80% done. Remove.
6Sauté carrot, ginger and spring onion in remaining oil, return beef to the wok. Add sauce and mix well.
7Dish on top of the vegetables and serve.
